Cheese Hot Cakes

Hot lunch or afternoon snacks. Also called “drop scones”
Ingredients
- 1½ cups plain flour
- 2 teaspoons baking powder
- l tablespoon castor sugar
- 1 cup milk
- 1 egg, lightly beaten
- 1 cup grated tasty cheese
Method
Mix flour and sugar in bowl. Stir in milk, egg and cheese, mix until well combined
Spoon tablespoons of mixture into heated greased frying pan, cook until bubbles appear on surface of hot cakes
Using an egg slice, turn and cook on the other side until lightly browned
Remove and place on plate or tray lined with absorbent paper
Repeat with remaining mixture
Serve hot spread with butter if desired
