Chicken Broth

Chicken Broth

The basic cooking medium for many dishes; from Chinese stir fries, to complex soups

Ingredients

  • l boiling chicken
  • 1 large onion, finely chopped
  • water
  • small bunch of parsley

Method

Place the chicken with onion in a large pot

Cover with water and bring to the boil, and boil for five minutes

Simmer for 1½ to 2 hours

Remove chicken carcass, and place on large clean platter or board

Pull cooked meat from bones. Meat can either be cut up and added back to broth to serve as chicken soup, or used to make a chicken dish i.e.. Sweet and Sour Chicken

To serve as soup, add chicken meat back to broth, and garnish with finely chopped parsley
