Curried Soup

One of those camp things! Tastes great, simple to make, looks weird :-/
Ingredients
- 50 g butter
- 600 ml chicken stock
- 1 tablespoon cornflour
- 2 egg yolks
- 1 eating apple, finely chopped
- 2 large onions, finely chopped
- 1 tablespoon curry powder
- 250 ml cream
- juice of ½ a lemon
- 25 ml cold water
Method
Melt butter in a pot and add onions until soft, but not brown
Stir in chicken stock, finely chopped apple and curry powder
Mix cornflour with a little cold water, and add to pot
Bring to the boil and then simmer for eight minutes
Beat egg yolks into the cream. Gradually pour this mixture into hot soup while gently stirring it
Remove from the heat immediately
Season to taste with salt, pepper and lemon juice
