Irish Stew

A kiwi camping take on the traditional Irish dinner
Ingredients
- 2 Kg mutton pieces or 2 chops per person (neck)
- 1.5 kg potatoes
- 3 onions
- 750 g carrots
Method
Peel and slice potatoes and onions, add them and meat into a large billy, season with salt and pepper, and just cover with water
Place lid on and cook very slowly, it should simmer not boil for at least 2 to 3 hours
Serve with peas or beans
